Milk bread rolls: how to make them perfect and fluffy

Ingredients:
500 grams of flour 0
2 whole eggs
200 ml of whole milk
35 grams of sugar
150 gr of freshened and doubled mother yeast
or make a leaven with 100 gr of flour type 0, 50 gr of water and 7/8 gr of brewer's yeast
90 gr of butter
1 pinch of salt
Preparation:
If you do not have the mother yeast, prepare the leaven and let it double in volume.
Then in the mixer, mix flour, 2 eggs, milk, sugar and yeast.
Then add the butter and salt.
Form a homogeneous dough and let it rise until doubled in volume.
Form the sandwiches and let them rest until doubled.
Then make cuts on each sandwich, brush with milk and bake at 180 degrees for 20 minutes.
