SALMON FRITTATA: quick and tasty!

INGREDIENTS:
4 eggs
150g smoked or fresh salmon
150g ricotta cheese (well drained)
Green onion to taste
Extra virgin olive oil, as needed
Black pepper, to taste
Salt, to taste
METHOD:
1. Cut the smoked salmon into small pieces.
2. Crack the eggs into a mixing bowl.
3. Add the well-drained ricotta cheese.
4. Whisk thoroughly until the mixture is smooth and lump-free. Season with salt, black pepper, and chopped green onions.
5. Add the salmon pieces to the egg mixture and mix gently.
6. Heat a generous drizzle of extra virgin olive oil in a non-stick skillet over low heat.
7. Pour the mixture into the skillet, cover with a lid, and cook over very low heat for a few minutes until the bottom is set.
8. Carefully flip the frittata using the lid or a plate, then cook for another minute on the other side.
9. Serve hot, garnished with extra salmon slices and fresh chives if desired.
