Zucchini boats: the recipe to make a healthy meal in no time

Ingredients:
2 zucchini
1 onion
Olive oil
2 garlic cloves
Salt and pepper
Sweet paprika
Fresh parsley
100 g of shredded mozzarella cheese
2 eggs
30 g of capers
Chives
2 cherry tomatoes
Directions:
1. Carve zucchini and chop the pulp.
2. Fry it in a pan with olive oil, diced onion and minced garlic.
3. Season with salt, pepper, paprika and parsley.
4. Brush zucchini with a mixture of olive oil, salt and pepper.
5. Bake them at 180° for 15 minutes.
6. Now stuff with cooked zucchini, shredded mozzarella cheese, egg, capers, chives, salt, pepper and tomatoes.
7. Bake again for 10-15 minutes.
