Zucchini calzone: a delicious dish ready in no-time!

Ready in 5 minutes in a pan!

Ingredients:

⦁ 600 g (6-8 medium) potatoes, boiled and peeled;

⦁ 50 g (1/2 cup) parmesan cheese;

⦁ 150 g (1 cup) grated zucchini;

⦁ 60 g (1/2 cup) flour;

⦁ salt and pepper to taste;

⦁ 45 g (1/2 cup) breadcrumbs;

⦁ 1/4 cup chopped parsley;

⦁ ham and cheese for filling.

Instructions

1. Mash potatoes with a fork and combine with zucchini (squeezed), parmesan, flour, salt and pepper, breadcrumbs and parsley.

2. Roll out potato dough on a nicely floured surface, then cut circles out of it.

3. Fill each circle with a few slices of mozzarella and some ham. Fold in half and pinch the edges nicely.

4. Fry calzones on both sides until golden.
