Potato and zucchini toast: easy, tasty and ready in no-time!

INGREDIENTS
850g (4 1/4 cups) Potatoes
1 Egg
4g (1 tsp) Salt
4g (1 tsp) Pepper
100g (1/2 cup) Grounded cheese
50g (2/3 cup) Breadcrumbs
1 Zucchini
Olive oil
100g (1/2 cup) Cheese
Basil
 
METHOD
  1. Cook the potatoes, squash then and add grounded cheese, salt, pepper and egg. Mix well and add breadcrumbs.
  2. In other bowl grind the zucchinis and add salt to them.
  3. Divide the potato mixture into 4 parts. On baking paper put some olive oil and add 1 part of the potato mixture. Divide it into two parts. One part of it presses and make a square.
  4. Strain the zucchini and put them on the square. Add basil and cheese. Make a square of the second part of the mixture and put it on the zucchinis. Put the squares into the pan and grill them. Serve.
