Korean toast: a delicious sandwich ready in no-time!

This is not the usual sandwich!
INGREDIENTS
INGREDIENTS
4-6 eggs;
Salt and pepper;
1 medium carrot;
¼ medium cabbage;
3 tbsp chopped parsley;
2 slices cheese;
Toasted bread.
METHOD
- Shred carrots and cabbage thinly.
- Mix vegetables with salt and pepper in a large bowl. Add parsley.
- Combine vegetables with eggs.
- Brush a non-stick pan with some vegetable oil and pour egg mixture onto it. Wait until the egg sets, then fold the omelet 2 times.
- Pour some more egg mixture and wait for it to set too. Fold this part on top of the egg roll and place a piece of cheese on top.
- When cheese melts, place egg patty between two pieces of toasted bread and serve.
