Pan toasted potato sandwich: An easy and fun dinner idea that is ready in no time!

These pan toasted potato sandwiches are a great idea for a nutritious and tasty meal. The dough for the ‘bread slices’ is light and tasty, and the cheese filling is irresistible. INGREDIENTS FOR 2 SERVINGS
400g potatoes
200g flour
50g Parmesan cheese
1 packet of baking powder
salt
pepper
parsley
1 egg
100g bologna
6 slices of cheese
METHOD
Boil and mash the potatoes and add salt, pepper, and parsley to them. Once they have cooled, add the egg, flour and baking soda. Spread out the mixture and cut out four squares, these will be used as the slices of bread for your sandwiches. On two of these squares place the bologna and the cheese slices (you can fill them with anything you like), top with the other slice and carefully seal all four sides. Cook them in a pan on low heat for about 8 minutes per side. Serve hot!
