Stuffed focaccia in a pan: a delicious dinner idea ready in a pan!

A simple yet delicious recipe to make without using the oven!
INGREDIENTS

For the dough:
150 ml (2/3 cup) water
7g dry yeast
15 g (1 tbsp) sugar
250 g (1 2/3 cup) flour
15ml (1 tbsp) olive oil
For the filling:
4 small potatoes
30ml (2 tbsp) milk
3 g (1/2 tsp) salt
1g (1/4 tsp) black pepper
1g (1/4 tsp) red pepper powder
15 g (1 tbsp) green onions
50 g (1/3 cup) cheese, shredded
METHOD
- In a bowl combine water, dry yeast, and sugar. Add flour and start to mix the dough with a spatula. Add olive oil and continue to knead it with your hands until you receive an elastic dough.
- Form a ball from the dough and cover the bowl with a kitchen cloth or plastic wrap. Allow the dough to rise twice in a warm place.
- Meanwhile, prepare the filling: In a bowl combine mashed potatoes, milk, red pepper, black pepper, and salt. Add green onion and cheese and mix until you get a homogeneous mixture. Form a ball and set it aside.
- Transfer the dough to the working surface, knead a bit and roll it into a circle shape with a rolling pin.
- Put the filling in the middle and wrap the dough.
- Flatten it with your hands and roll with a rolling pin into a 22-24 cm circle, cover with a kitchen cloth, and let sit for 10 minutes.
- Grease a frying pan with oil and cook focaccia for 5-7 minutes per side.
