How to make a delicious potato focaccia in a pan!

No oven needed! This recipe is a keeper! 

INGREDIENTS
 6-7 potatoes (700 g);
 2 eggs;
 60g (½ cup) flour;
 Salt and pepper;
 Sliced cheese and ham.
 
METHOD
  1.  Poke potatoes with a fork and microwave on max settings for 8-10 minutes.
  2.  Let the potatoes cool down, then peel and mash them.
  3.  Add eggs, flour, salt and pepper into the potato mash.
  4.  Brush a non-stick pan with oil and spread half of the potato mixture on top.
  5.  Add sliced cheese and ham. Top with leftover half of potatoes.
  6.  Cook for 4-5 minutes per side over medium heat.
