Stuffed focaccia: here's how to make it perfect!

INGREDIENTS
520g (4 1/4 cups) of all-purpose flour
8g of dry yeast
7g (1/2 tbsp) of sugar
420ml (1 3/4 cups) of water
16g (1 tbsp) of salt
30ml (2 1/2 tbsp) of olive oil
Ham
Cheese
Coarse salt
METHOD
1. In a bowl add the flour, dry yeast, sugar, and water and mix with the spatula. Add the salt and olive oil and mix with a spatula to combine. Cover with cling film and set aside for 20 minutes.
2. After 20 minutes make folds with the spatula. Cover with cling film and let it rise for 1 hour.
3. After time has elapsed transfer the dough to the working surface and split it into half.
4. Add a drizzle of olive oil to the pan covered with parchment paper and transfer one-half of the dough. Stretch it to cover the bottom part.
5. Arrange the ham slices and cheese on top and cover with another half of the dough. Seal it well on all sides. Cover with a cloth and let it rise for 40 minutes.
6. After time has elapsed pour olive oil on top and make the classic holes of the focaccia with your fingertips.
7. Add a coarse salt on top and transfer to the oven. Bake at 190°C/374°F for 25 minutes.
8. Cut the stuffed focaccia into pieces after baking and serve.
