Christmas Focaccia: how to make a fluffy and beautiful focaccia bread

INGREDIENTS
320ml (1 1/4 cups) of water
12g (1 tbsp) of sugar
15g of fresh yeast
420g (3 1/2 cups) of all-purpose flour
10g (1/2 tbsp) of salt
30ml (2 1/4 tbsp) of olive oil
For decoration:
Parsley
Cherry tomatoes
Onion
Pepper
METHOD
1. In a bowl add the water, sugar, and yeast and mix to dissolve. Add the flour and salt and mix with a spatula. Finally, add the olive oil and continue with mixing. Cover with cling film and let it rest for 20 minutes.
2. After 20 minutes pour a drizzle of olive oil over the dough and make the 4 folds. Cover with cling film and let it rest for 15 minutes.
3. After 15 minutes repeat the process with folding one more time. Cover with cling film and let it rise for 40 minutes.
4. Pour a drizzle of olive on a pan covered with parchment paper and transfer the dough. Strech it with your hands to cover all sides. Cover with cling film and let it rise for 40 minutes.
5. After time has elapsed pour olive oil on top and make the classic holes of the focaccia with your fingertips.
6. Start making a Christmas tree placing first the parsley, then cherry tomatoes, onion, and pepper. Add a drizzle of olive oil and transfer to the oven. Bake at 190°C/374°F for 40 minutes.
7. Cut the Christmas focaccia into slices and serve.
