Focaccia bretzel: a great tip to make a fluffy and delicious bread in no-time!

It will be the best focaccia of your life!
INGREDIENTS

500 g (3.62 cups) 00 flour;
30 g fresh yeast;
2 tsp salt;
240 ml (1 cup) warm water;
25g (0.8 oz) butter, softened;
1 tsp sugar
4 cups (1 l) water;
2 tsp salt;
3 tbsp baking soda;
Coarse sea salt.
METHOD
- Make a well in the center of the flour. Add water, sugar and dissolve yeast in the middle.
- Set aside for 10 minutes for the yeast to activate. Knead the dough with soft butter until smooth, then set aside for 1 hour.
- Stretch the dough in a large baking pan covered with parchment and olive oil. Make some indents on the surface using your fingertips. Set aside for 30 minutes.
- Cut focaccia into quarters.
- Bring water, salt and soda to boil and boil each piece of the dough for 40 seconds. Transfer into the same baking pan and season with coarse salt. Bake for 30 minutes at 200C/400F.
