Stuffed potato focaccia: full of taste and ready in the pan!

So delicious and easy to make!
INGREDIENTS
INGREDIENTS
500g (3 1/3 cups) potatoes
1 egg
160g (1 1/4 cups) flour
50g (1/2 cup) Parmesan, grated (for potato mixture)
5 slices cooked ham
40g (1/4 cup) Scamorza, diced
40g (1/4 cup) Mozzarella, shredded
30g (2 tbsp) Parmesan, grated (for the filling)
5g (1 tsp) vegetable oil (to grease a pan)
salt to taste
METHOD
- Cook potatoes in salted boiling water for 30-40 minutes, then mash them and let cool.
- Once cooled, add egg, flour, Parmesan, salt and mix with a fork until you get a homogeneous mixture.
- Put half of the dough in a pan greased with vegetable oil and press it with your hands to cover the entire pan.
- Put prosciutto slices on top, add scamorza and mozzarella, and sprinkle with grated parmesan
- Then cover with the rest of the dough, and flatten it with your hands.
- Cook in a pan for 7-8 minutes per side. Serve immediately.
