Stuffed potato focaccia: full of taste and ready in the pan!

So delicious and easy to make!

INGREDIENTS
500g (3 1/3 cups) potatoes
1 egg
160g (1 1/4 cups) flour
50g (1/2 cup) Parmesan, grated (for potato mixture)
5 slices cooked ham
40g (1/4 cup) Scamorza, diced
40g (1/4 cup) Mozzarella, shredded
30g (2 tbsp) Parmesan, grated (for the filling)
5g (1 tsp) vegetable oil (to grease a pan)
salt to taste

METHOD
  1. Cook potatoes in salted boiling water for 30-40 minutes, then mash them and let cool.
  2. Once cooled, add egg, flour, Parmesan, salt and mix with a fork until you get a homogeneous mixture.
  3. Put half of the dough in a pan greased with vegetable oil and press it with your hands to cover the entire pan.
  4. Put prosciutto slices on top, add scamorza and mozzarella, and sprinkle with grated parmesan
  5. Then cover with the rest of the dough, and flatten it with your hands.
  6. Cook in a pan for 7-8 minutes per side. Serve immediately.
