Zucchini nuggets: easy and tasty!

INGREDIENTS
520g of potatoes
Water
1 zucchini
1 egg
60g of parmesan
Salt
Pepper
160g of cheese
Cornflakes
Extra virgin olive oil
METHOD
1. Peal and cut the potatoes into small pieces and transfer them to the microwave safe dish. Pour a little water over them and cover with cling film. Transfer to the microwave for 10 minutes.
2. Grate the zucchini and set aside. Remove the excess of water.
3. Add the potatoes to the mixing bowl and mash them with a fork. Add the grated zucchini, egg, parmesan, salt, and pepper, and mix all together well.
4. Oil the hands and make the nuggets shape placing the piece of cheese in the middle.
5. Cover the nuggets with the cornflakes and transfer them to the pan covered with parchment paper.
6. Add a drizzle of olive oil to the nuggets and transfer them to the oven. Bake them at 190°C/374°F for 20 minutes, or until they are golden brown.
