Baked eggplant casserole: the recipe to make a delicious meal with no frying

Ingredients:
2 eggplants
Salt and pepper
Paprika
Dried oregano
Garlic powder
Olive oil
250 g of breadcrumbs
50 g of grated cheese
1 red onion
1 garlic clove
2 bell peppers
250 g of tomato sauce
Parsley
120 g of mozzarella cheese
30 g of grated cheese
Directions:
1. Slice the eggplants, sprinkle with salt and let sit for 15 minutes.

2. Season with olive oil, salt, pepper, paprika, oregano and garlic powder.
3. Mix breadcrumbs, cheese and oregano and use this mixture to coat eggplant slices.
4. Bake at 180° for 20 minutes.
5. Stir fry onion and garlic in a pan with oil, then add bell pepper. Season with spices.
6. Pour in tomato sauce, parsley and let simmer for 3-4 minutes.
7. Pour in a casserole, then layer eggplant cutlets from before and mozzarella cheese.
8. Bake again at 180° for 10-15 minutes.
