Sponge cake without baking powder: the simple way to make it

Ingredients:
240g eggs (about 4 large, weighed without shells)
160g of granulated sugar
120g of 00 flour (weak flour, max 8/9% protein)
40g of potato starch
1 sachet of vanillin or vanilla extract
Directions:
1. Sift the flour and starch and set aside.
2. Beat the eggs alone for 2/3 minutes.
3. In the meantime, add the vanilla and sugar several times.
4. Then add flour and starch.
5. Bake at 170° for 35 minutes.
