Brioche buns: the recipe to make perfect at home

Ingredients:
12 g of dry brewer's yeast
170 ml of room temperature milk
100 g of sugar
200 g of cake flour
300 g of Manitoba flour
100 g of room temperature butter
5 g of salt
2 eggs (120 g)
1 lemon grated zest
1 orange grated zest
1 tsp of honey
1 tsp of barley malt
1 tsp of vanilla extract
1 egg + 1 tbsp of milk for brushing
Directions:
1. For starters, dissolve yeast into the milk.
2. Sift flours in a bowl.
3. Then add yeast, eggs, sugar, honey, malt, zests and mix well.
4. Lastly add salt, stir in butter and shape into an even dough.
5. Let rest 1 hour at room temperature, then refrigerate overnight.
6. Now shape the buns and let rise 1 hour.
7. Brush with milk and egg mixture.
8. Bake at 200° for 20-25 minutes.
