Sweet buns: how to make them at home with few and easy steps!

How to make the fluffiest sweet buns! 

INGREDIENTS
 400 g (3 cups) bread flour;
 ½ tsp salt;
 12g (1 tbsp) sugar;
 10 g (1 tbsp) fresh yeast;
 240 ml (1 cup) warm milk;
 30 g (2 tbsp) butter, soft;
 Apricot jam;
 1l (4 cups) water;
 50g (3 ½ tbsp) baking soda.
 
METHOD
  1.  Whisk flour with salt and sugar. Crumble in fresh yeast and add warm milk. Knead the dough until smooth.
  2.  Add softened butter and work it into the dough.
  3.  Set the dough aside for 1 hour.
  4.  Cut the dough into 16 pieces and roll each into a ball. Set aside for 20 minutes.
  5.  Flatten the ball of dough with your hands and place a teaspoon of apricot jam in the middle.
  6.  Pinch the edges together to cover the filling, then set aside for 20 minutes more.
  7.  Boil water and add baking soda into it. Blanch buns in soda water for 30 seconds, then transfer onto a baking sheet, make small cuts on the top and bake at 190°C/375°F for 25 minutes.
