How to make mini panettone at home in a few steps!

They are the perfect gift for Christmas!
INGREDIENTS
INGREDIENTS
½ cup warm milk;
2 tsp dry yeast;
90 g (3 oz) sugar;
2 egg yolks;
1 egg;
½ tsp salt;
3 tbsp butter, melted;
90 g (3 oz) butter, room temperature;
90 g (3 oz) dried berries, chopped nuts;
¼ tsp vanilla powder;
2 1/3 cup flour.
METHOD
- Combine a tablespoon of sugar with warm milk and yeast. Set aside to activate and bubble up.
- Whisk egg yolks and a whole egg with leftover sugar, a pinch of salt, vanilla and melted butter.
- Pour yeast solution into egg mixture.
- Sift the flour and add it into the liquids. Knead the dough using hand mixer with a dough hooks for around 10 minutes, then cover and set aside to proof for around an hour.
- When the dough has proof, knead it, cut into thirds, and roll out on a nicely floured surface to form three thin, see-through sheets of dough.
- Brush each sheet with soft butter and top with cranberries and nuts. Roll sheet of the dough tightly, then carefully cut lengthwise 2/3 way up. Wrap the ends into a snail-shaped bun as shown on the video.
- Place each panettone into a small mold and leave it to proof for another hour, then bake at 180C/350F for 25-30 minutes or until golden.
