PANETTONE PUDDING: You can make a fantastic dessert for the holidays!

INGREDIENTS (for a 22cm mold)
500g panettone
500ml milk (2 cups)
200ml heavy cream (3/4 cup + 1 tbsp)
120g sugar (1/2 cup)
100ml Cointreau (1/3 cup + 1 tbsp)
4 egg yolks
200g dark chocolate (chopped)
100ml heavy cream (1/3 cup + 1 tsp)
30g butter (2 tbsp)
A few sprigs of red currants
30g sliced almonds
A few mint leaves
500ml milk (2 cups)
200ml heavy cream (3/4 cup + 1 tbsp)
120g sugar (1/2 cup)
100ml Cointreau (1/3 cup + 1 tbsp)
4 egg yolks
200g dark chocolate (chopped)
100ml heavy cream (1/3 cup + 1 tsp)
30g butter (2 tbsp)
A few sprigs of red currants
30g sliced almonds
A few mint leaves
METHOD
1. Cut the panettone into pieces, place it in a mixer and blend it finely.
2. In a large bowl, pour the milk, heavy cream, sugar, Cointreau and egg yolks.
3. Mix with a whisk until the mixture is smooth.
4. Add the blended panettone and mix until you get a smooth, homogeneous mixture.
5. Pour the mixture into a previously buttered and floured mold.
6. Bake at 180°C (356°F) for about 50 minutes, then let it cool.
7. Place the dark chocolate and butter in a bowl, add the hot cream and mix until you obtain a smooth ganache.
8. Decorate the pudding by spreading the ganache over the top, then add the red currants, a few mint leaves and the sliced almonds.
