CANDY COAL: the cute little treat to put in your Epiphany stocking!

INGREDIENTS
For the icing:
1 egg white
Lemon juice
310g (2 1/2 cups) powdered sugar
8g black food coloring
12g vodka
 
For the syrup:
110ml (1/2 cup) water
7g black food coloring
310g (1 1/2 cups) sugar
 
METHOD
1. Add the egg white to a bowl with a few drops of lemon juice and mix with an electric mixer. Gradually add the powdered sugar, one spoon at a time, and continue mixing.
2. Add the black food coloring and vodka, mixing until you obtain a thick, dark icing.
3. To prepare the syrup, combine the water, black food coloring, and sugar in a pot and boil until it reaches 140°C.
4. Place two tablespoons of the prepared icing in a microwave-safe bowl and heat in the microwave for 2 minutes.
5. Pour the heated icing into the syrup, mix quickly, and immediately transfer the mixture into a plumcake mold lined with parchment paper. It will rise in volume.
6. Let the sweet coal harden at room temperature, then remove it from the mold and roughly chop it with a knife to achieve the “charcoal” effect.
