FRITTATA TREES: Serve them at your Christmas dinner to make it even more special!

INGREDIENTS
For the omelette:
Extra virgin olive oil
1 clove of garlic
500g spinach (frozen)
8 eggs
75g Parmesan
Salt
Pepper
For the Christmas trees:
400g cheese
Olives
Currants
METHOD
1. Add olive oil, garlic, and frozen spinach to a pan and cook for about 20 minutes. Remove from the heat and let cool.
2. In a bowl, whisk together the eggs, Parmesan, salt, and pepper. Add the spinach and mix to combine. Divide the mixture in half.
3. Add a drizzle of olive oil to a pan and pour in one half of the mixture. Cover with a lid and cook for 8 minutes.
4. Flip the omelette using a plate and cook the other side for another 3 minutes. Repeat the process with the remaining mixture. Remove from the heat and allow to cool completely.
5. Using star-shaped cookie cutters in three different sizes, cut out the omelette stars needed to assemble the trees.
6. Slice the cheese and cut out stars of different sizes (large, medium, small).
7. Assemble the trees by layering a large omelette star, then a large cheese star, then a medium omelette star, and so on, alternating colors and sizes. Finish with a small star on top and a pitted olive.
8. Insert a skewer through the entire tree to hold it together. Decorate the plate with currants.
9. Serve the Christmas trees on a platter and enjoy.
