Stuffed Pandoro: a must-have on the holiday table!

INGREDIENTS
1 pandoro
500ml (2 cups) whipping cream
250g (1 cup) mascarpone
50g (1/2 cup) powdered sugar
300g mixed berries
1 tsp vanilla extract
Powdered sugar for decoration
120 g mixed berries
METHOD
1. Cut the pandoro into 6 slices using a serrated knife.
2. In a large bowl, add the mascarpone, cold whipping cream, powdered sugar, and vanilla extract.
3. Whip everything with an electric mixer until you get a firm, fluffy cream.
4. Transfer the cream into a piping bag fitted with a round tip.
5. Fill each slice of pandoro with the cream, starting from the base.
6. Add mixed berries on top of each layer of cream before adding the next slice.
7. If you like, you can slightly rotate the layers and decorate the tips with blueberries and red currants.
8. Finally, top the pandoro with plenty of mixed berries and a dusting of powdered sugar.
