PORK LOIN WITH APPLES: a great recipe everyone will love!

INGREDIENTS
For the broth:
2 carrots
1 potato
1 onion
2 tomatoes
1 celery stalk
700ml water
For the roast:
Vegetable broth
1kg pork loin
Rosemary
Salt
Extra virgin olive oil
1 onion
2 apples
1 cup of white wine
METHOD
1. Start by preparing the broth: pour the water into a pot and add all the vegetables and aromatics, cleaned and roughly chopped.
2. Cook for about 40 minutes.
3. Remove the vegetables from the broth and set the liquid aside.
4. Take the pork loin and tuck sprigs of rosemary under the kitchen twine.
5. Heat some olive oil in a large pot.
6. Add the onion, cut into thick rounds.
7. Add the pork loin and sear it well on all sides.
8. Deglaze with the white wine and let all the alcohol evaporate.
9. Add the previously prepared broth and the peeled apples cut into cubes.
10. Cook over low heat for about 2 hours.
11. Remove the roast from the pot and let it cool slightly, then slice it.
12. Strain the remaining broth and blend the solid parts with an immersion blender to create a creamy sauce to pour over the slices of roast.
