Loin rolls stuffed with cheese and ham: a simple recipe for an exquisite second dish!

The whole family will love this easy recipe!
INGREDIENTS
600g (1.3 lb) pork loin
200g (0.4 lb) cooked ham
30g Parmesan, sliced
30g (2 tbsp) Parmesan, grated
3 potatoes, peeled
50g (1/2 cup) breadcrumbs
salt to taste
Garlic, minced
6g (2 tsp) parsley
A pinch rosemary
30ml (2 tbsp) olive oil (for greasing)
METHOD
- In a bowl combine breadcrumbs, a teaspoon of parsley, and grated parmesan, mix well.
- Slice pork loin into thin slices. Arrange them on a piece of parchment paper, cover with another piece and tenderize with a meat mallet. Season each meat slice with chopped parsley and salt.
- Arrange a slice of ham on each piece of meat and top with some parmesan slices.
- Roll each meat slice, drizzle with olive oil, and coat in seasoned bread crumbs.
- Thread the rolls onto wooden skewers, use a separate skewer for every 3 rolls.
- Arrange loin rolls into a greased baking dish.
- Slice potatoes into cubes and arrange in between meat skewers. Season with salt and rosemary and drizzle with some olive oil.
- Bake in the preheated to 180C/360F oven for 35-40 minutes.
- Arrange on a serving plate and serve immediately.
