Candied pear chips: perfect to decorate your desserts!

INGREDIENTS
3 pears (not too ripe).
For the cooking liquid:
300g of water.
2g of pea flowers.
2 cinnamon sticks.
1/2 vanilla berry.
Juice of 1/2 lemon.
Peel of 1/2 lemon.
1tbsp honey.
For syrup:.
150g of sugar.
50g of water.
5g of white vinegar.
Cook to 157 degrees
METHOD
1. In a saucepan pour water, honey, pea flowers, and all aromas.
2. Peel the pears and put them in the liquid.
3. Put the saucepan on the heat and boil and cook for 5 minutes.
4. Turn off the heat and cover with film. Allow the pears to cool in the cooking liquid so that the color is absorbed.
5. Cut the pears into thin slices and place them on a baking sheet with a silpat or alternatively on parchment paper.
6. Place the pan in the oven at 75°C/167°F for about 3h, the pears should be dry (no liquid).
7. Now prepare the syrup: pour: water, vinegar and sugar in a saucepan and bring the mixture to 157°C/314°F
8. Quickly dip the pear chips into the syrup, dropping the excess.
9. Let the glazed pear chips cool on the baking sheet with silpat or baking paper.
10. When they are cold, the crystallized pears are ready to be used!
