Step 1 Lighting Your Coal Chimney:
Fill the base of your coal chimney with card or paper.
Flip over your chimney.
Add the coals to the chimney.
Light the paper and allow the chimney to burn until the smoke subsides to just a little.
Step 2 Direct and Indirect Heat:
Pour the coals into the grill.
Level out the coals ensuring you only cover 2/3rds of the grill with coals.
This sets up your indirect and direct heating zones.
Step 3 Preparing to Cook:
Rub the grill grid with half an onion, this helps remove soot and adds flavour.
Oil your grill grates, on the direct heat side use kitchen paper soaked in oil.
If you are only using the indirect heat zone you can use oil spray.
Step 4 Clean Down:
Allow the coals to cool but not go completely cold.
Take a large sheet of tin foil and screw into a ball.
Run the grill grates with the foil and the grease and debris will transfer to the foil.
