ROSCON DE REYES: the traditional Spanish Christmas bread!

INGREDIENTS
For the dough:
500g (4 cups) of all-purpose flour
100g (1/2 cup) of sugar
1 orange (zest)
100ml (1/2 cup) of milk
100g (1/2 cup) of butter (melted)
25g of fresh yeast
Orange blossom water
200g of eggs
6g (1 tsp) salt
 
For decoration:
1 egg for egg wash
Candied cherries
Candied orange
Flaked almonds
Sugar granules
 
METHOD
1. In a mixing bowl, add the flour, sugar, and orange zest, and mix.
2. In a small bowl, combine the milk, melted butter, fresh yeast, and orange blossom flavoring. Mix to combine.
3. In a mixing bowl, add the eggs and the prepared yeast mixture. Mix, then add the salt and knead the dough by hand. Knead until the dough is smooth and compact. Cover with a cloth and let it rise for 3 hours.
4. After the dough has risen, transfer it to a baking tray lined with parchment paper and shape it into a donut shape. Brush with egg wash and let it rise for 1 hour.
5. After 1 hour, brush the donut dough again with the egg wash. Decorate with candied cherries, candied orange, flaked almonds, and sugar granules. Bake at 170°C/340°F for 40 minutes.
6. Serve the Roscon de Reyes, cut a slice, and enjoy.
