Windsor bread: the traditional Japanese sweet bread!

INGREDIENTS
350g (2 1/3 cups) flour
50g (1/4 cup) sugar
3g (1/2 tsp) sea salt
4g (1 tsp) instant yeast
1 egg
130g (1/2 cup) yogurt
80ml (1/3 cup) milk
25g (2 tbsp) butter
For brushing:
Egg wash
For decoration (optional):
Almond flakes
For serving (optional):
Hazelnut cream
METHOD
- In a mixing bowl combine flour, sugar, sea salt and dry yeast.
- Add yogurt, milk and egg to a bowl and stir slightly with a spatula. Then use a hand mixer with dough hooks and knead for a few minutes till the dough combines.
- Add in butter and knead till you receive an elastic dough.
- Cover the bowl with a kitchen cloth or plastic wrap, and allow the dough to rise twice in a warm place.
- Transfer the dough to a lightly floured working surface and divide it into 8 parts.
- Form each piece into a ball. Cover balls with a kitchen cloth or plastic wrap and leave for 15 minutes.
- Take 1 ball and flatten it into a thin oval, then roll it up from the longest side.
- Place it in a baking pan lined with parchment paper. Continue with all other dough balls.
- Leave in a warm place to rise for 40-60 minutes.
- Lightly brush the top of the raised Windsor bread with egg wash, sprinkle with almond flakes and bake on the lower rack at 170C/340F for 25 minutes.
- Divide the bread into slices and serve topped with hazelnut cream.
