Lettuce wraps: so easy, tasty and summery!

Ingredients:
1 Tbsp Cooking Oil
150g Diced Onion
500g Ground Turkey
1 Tsp Salt
½ Tsp Tomato Paste
2 Tsp Chili powder
100ml Chicken Stock
2 Baby Gem Lettuce
 
To Top:
Chopped Red Onion
Chopped Parsley
Diced Tomato
Parmesan Flakes.
 
Instructions:
Heat your cooking oil in a pan and then add the onion.
Cook the onion for 2 minutes before adding the turkey.
Add the salt, stir and cook for 2 minutes.
Add the tomato paste and chili powder and stir before pouring in the chicken stock.
Stir and simmer for 4-5 minutes.
Scoop into Baby Gem Lettuce Leaves and top with toppings of your choice.
