Bacon wrapped avocado rolls: creamy, easy and tasty!
 
Ingredients:
 
Filling:
2 medium avocados
2 eggs, hard-boiled  and chopped
1 tbsp red onion, chopped fine
2 tsp jalapeño pepper, minced
1 tsp lime juice
salt and pepper to taste
 

Spring Rolls:
12 large spring roll wraps
12 bacon slices
.
INSTRUCTIONS
1. Preheat oven to 200 degrees.
2. Line a baking sheet with parchment paper.
3. In a medium bowl, mash the avocados and add all the ingredients from the list.
5. Place a spring roll wrapper on a work surface.
6. Spoon a tablespoon of avocado filling onto one corner, and wrap it up into a package following the video.
7. Do the same with the remaining 11 wrappers.
Wrap each spring roll with one slice of bacon.
Place avocado rolls on baking sheet.
Bake for 20 minutes
Serve and enjoy!
