Chocalate chips panettone: how to make it at home in a few steps!

INGREDIENTS
Dough 1:
60g (1/2 cup) all-purpose flour;
60ml (4 tbsp) water;
10g fresh yeast.
Dough 2:
110g (1 cup) 00 flour;
110g (1 cup) all-purpose flour;
100ml (1/2 cup) warm water;
60g (1/3 cup) sugar;
60g (1/4 cup) butter, soft;
1 egg.
Dough 3:
60g (1/2 cup) 00 flour;
60g (1/2 cup) all-purpose flour;
60ml (1/4 cup) warm water;
60g (1/3 cup) sugar;
70g (1/4 cup) butter, soft;
1 egg;
1 tsp vanilla extract;
200g (1 cup) dark chocolate, chopped.
METHOD
- Combine ingredients for the first dough, knead well and set aside for 30 minutes.
- In a large bowl knead together dough 1 with ingredients from the list of dough 2. When everything comes together, continue kneading the dough for 10 minutes.
- Cover the bowl with plastic and set aside for 2 hours.
- Finally knead the dough with ingredients from the list for dough Knead everything for 10 minutes, add chocolate and knead until it incorporates evenly. Set the dough aside for 30 minutes.
- Round the dough and place it into the large panettone mold. Dust with flour lightly and let sit for 6 hours.
- Make slits on top of the dough and unfold them. Brush panettone with melted butter and bake at 200C/400F for 20 minutes. Then lower the temperature to 180C/350F for 50 minutes.
- Leave to cool down completely before removing from the pan and slicing.
