Veggies and eggs in a pan: the creamy and savory recipe to try

Ingredients:
3 eggs
3 garlic cloves
1 onion
2 or 3 eggplants
1 red bell pepper
Tomato sauce
Olive oil
Salt
Cumin, cayenne pepper, thyme
Feta cheese
Fresh parsley
Directions:
1. Finely chop garlic and onion, then dice eggplants and bell pepper.
2. Stir fry the vegetable in a pan with some olive oil and salt. Then season with spices and herbs.
3. When they're soft add tomato sauce and continue cooking at medium heat for a couple of minutes.
4. Now add eggs, put a lid on and cook.
5. Turn off the stove and serve with some crumbled feta cheese and fresh parsley.
