Tomato omelette: the simple and savory recipe for a quick meal

Ingredients:
Tomatoes
Spring onion
Parsley
Eggs
Salt and pepper to taste
Olive oil
Directions:
1. Slice tomatoes and chop spring onion and parsley.
2. Whisk the eggs using a fork.
3. Add parsley, spring onion, salt and pepper.
4. Pour some olive oil on the bottom of a pan, then arrange the tomatoes.
5. Now pour the egg mixture on top.
6. Cook at low heat on both sides.
7. Serve with some lettuce.
