Tortilla omelette: a simple but delightful recipe!

Just 1 tortilla and some eggs to make an incredible dinner!


INGREDIENTS
2 flatbreads;
55 g (¼ cup) shredded mozzarella;
3 eggs;
1 tbsp chopped parsley;
salt, pepper;
melted butter.
METHOD
  1. Brush the pan with melted butter and place 1 flatbread on top.
  2. Pour egg on the flatbread. Add cheese, parsley, salt and pepper.
  3. Whisk eggs with cheese using a fork and cover with another flatbread.
  4. Cover with a lid and cook for 2-3 minutes, flip and cook for 2-3 minutes more or until golden and the eggs have set.
