INGREDIENTS
Tortilla
3 eggs
1 red pepper
1 yellow pepper
1 onion
1/2 tsp salt
1/2 tsp pepper
Fresh thyme
Shredded mozzarella

METHOD
  1. Put the tortilla into the baking pan, top with eggs, chopped peppers, onion, mozzarella, salt and thyme.
  2. Bake at 200°C (400°F) for 15 minutes.
