Stuffed eggplants: the tasty, simple and quick meal

Ingredients:
3 medium eggplants
400 g of minced meat
Olive oil to taste
Salt and Pepper to taste
Sweet paprika to taste
400 g canned peeled tomatoes
1 onion
1 clove of garlic
100ml of water
150 g of mozzarella
Green pepper
Directions:
1. Cut the eggplants in half and score the flesh.
2. Season them with oil, salt and pepper and place them on a baking tray covered with parchment paper.
3. Bake in the oven at 180° for 25-30 minutes.
4. Pour a little oil into a pan and fry the meat.
5. Add the chopped onion and garlic, tomatoes and water.
6. Season with salt, pepper and paprika.
7. Cover with lid and cook for 15 minutes on medium heat.
8. Also insert the eggplant pulp.
9. Stuff the aubergines with this mixture, then cover with the mozzarella. Finally cover with mozzarella.
10. Bake at 180° for 20 minutes.
