Stuffed eggplant bundles: the savory recipe for a complete meal

Ingredients:
1 eggplant (500 g)
Olive oil
Salt and pepper
400-500 g of veal or beef minced meat
1 medium-sized egg
1 red onion
Sweet paprika
Coriander
Garlic powder
Fresh parsley
30 g of grated cheese
50 g of breadcrumbs
Chili oil (optional)
300 g of tomato sauce
Dried oregano
Cherry tomatoes
Shredded mozzarella cheese
Directions:
1. Slice the eggplant, place it in a tray and season with oil, salt and pepper.
2. Bake at 180° for 20 minutes.
3. Aside mix meat, chopped onion, egg, salt, spices and chopped parsley.
4. Also add cheese and breadcrumbs.
5. Knead until you combine all the ingredients.
6. Fill the eggplant slices with the meat mixture, then fold them to shape the bundles.
7. Aside season tomato sauce with oil, oregano, salt and pepper.
8. Pour a spoonful of sauce on the bottom of a tray and then arrange the eggplant bundles.
9. Cover with some more tomato sauce and cherry tomatoes.
10. Bake at 180° for 25-30 minutes, then add mozzarella cheese on top and finish baking for 15 minutes more.
