Stuffed avocados: the healthy and savory dish to try

Ingredients:
1 avocado per person
1 or 2 chicken fillets
1 or 2 spring onions or 1 onion
Corn
1 or 2 carrots
Mayonnaise
Pistachios
Lemon
Salt and pepper
1 tbsp of mustard
Directions:
1. Finely chop carrots, onion and pistachios.
2. Season the chicken with salt and pepper, then cook it in a pan with a little bit of olive oil.
3. When it's golden on both sides cut it in small pieces.
4. Open the avocado, take off the pulp and keep the peels aside after rubbing the lemon in them so that they don't turn black.
5. Dice the avocado and add some lemon juice.
6. In a bowl now mix avocado, chicken, carrots, onion, corn and pistachios.
7. Mix mayonnaise and mustard and add this sauce to the salad. Stir well.
8. Fill the avocado peels with this mustard.
9. Let cool in the fridge before serving.
