Stuffed avocado: creamy, easy and tasty!

Ingredients
1 tbsp olive oil
1 small onion, finely chopped
200g ground beef
1/2 tsp. chili powder
1/2 tsp. ground cumin
1/2 tsp. garlic powder
salt and pepper to taste
50g frozen corn
1 avocado
sliced Cheddar
sliced mozzarela cheese
parsley and tomato cubes for garnish
DIRECTIONS
In a large skillet over medium heat, heat oil. Add onion and cook until soft. Add ground beef, and fry till it gets brown. Drain fat.
Return skillet to heat and stir in spices from the list above along with frozen corn. Cook for 2 to 3 minutes more. Remove from heat.
Peel, half and deseed the avocado.Line up chopsticks on either side of it, then carefully make slices, make sure not to cut it all the way through.
Place slices of cheese between each cut, then put it in the oven on 250 degrees for 5 minutes, or until cheese melts.
Top avocado with ground beef mixture, tomato cubes and parsley.
