Sometimes all you crave is a bowl of creamy pasta that won’t send you on a diet guilt trip! This avocado pasta is a quick and easy pasta recipe with avocado. All you need to make this delicious, satisfying and vegan pasta dish is ripe avocados, garlic, olive oil, basil, pasta, and cherry tomatoes.

Instead of the heavy cream you’d use in a typical creamy pasta, this recipe makes use of avocado blended with olive oil and herbs. The result? A rich, creamy—and super tasty—dinner. All in a matter of minutes. This dish is suited for a vegan diet, but can easily be changed up to include a bit of meat.

Tips For Creamy Avocado Pasta

This creamy avocado pasta is vegan, but you can add meat if you want. Try smoked salmon, roasted and shredded chicken breast, pancetta, cooked bacon, or smoked turkey.

Make it even more nutritious by adding more veggies. Baby spinach, shelled peas, sautéed mushrooms, corn, peppers, broccoli, and squash will taste delicious and have more vitamins too!

Don’t feel like spaghetti? Use another pasta shape if you want. Some of our favorites include fusilli, bowties, macaroni, and rotini, macaroni.

The avocado may brown due to oxidation. To prevent this, add a squeeze of lemon juice to the blender. This will also ensure that leftovers don’t go brown.

For extra creaminess, add a few cashews (or cashew butter) to the avocados before blending.

If you want to make this grain-free and gluten-free, skip the pasta, and use zucchini noodles instead.

Serve the pasta on its own, or as a side to BBQ or grilled chicken breast.

How To Store Avocado Pasta

Store the pasta in the fridge. If you’re planning to store it for the next day (or think you will have leftovers), add a bit of lemon juice to the avocado sauce to prevent the avocado from going brown.

medium avocado

Basil leaves
Spaghetti pasta
300 g
Cherry tomatoes

How To Make Avocado Pasta 

Cut avocado in half and peel it.

Put peeled avocado, garlic, olive oil, and basil in a food processor and pulse until smooth.

Cook spaghetti in salted water.

In a pan combine spaghetti, avocado pesto, salt, pepper, and a couple of cherry halves and stir on medium heat for a few minutes.

Serve avocado pasta decorated with cherry tomato and basil leaves.

Notes

This pasta does double duty as a cool salad for summer! Keep it in the fridge and serve cold.
