Castagnole with custard: the Italian recipe to absolutely try

Ingredients:
500 g of flour 00
8 g of baking powder
150 g of granulated sugar
1 teaspoon of salt
25 ml of Rum
100 g of butter
3 eggs (160 g)
White wine to taste
Granulated sugar to taste (to garnish)
Custard:
6 yolks
250 g sugar
40 g corn starch
Vanilla bean
600 ml milk
Directions:
1. Cream: First mix the egg yolks and sugar well. Then add the starch and vanilla bean. Heat the milk, then add it to the mixture. Return everything to the heat, let it thicken and let the cream cool.
2. Dough: mix sifted flour, starch, baking powder and salt. Then add the rum, melted butter and eggs.
3. Finally add the wine and form a homogeneous dough.
4. cut the castagnole and fry them in hot oil.
5. Dip them in sugar and stuff them.
