carpaccio (boston butt) 
cheese (scamorza)
bacon (italian pancetta)
METHOD
1. Finely slice the shoulder butt.
2. Put on each slice cheese and pancetta, then roll.
3. Fix with a toothpick and bake for 20 minutes at 180°.
