Pistachio and berries charlotte: a beautiful and delicious dessert

Ingredients:
SAVOIARDI BISCUITS:
3 eggs
45g sugar
45g sugar
90g "00" flour
Powdered sugar
PISTACHIO MOUSSE:
250g mascarpone
70g unsweetened yogurt
80g sugar
100g pistachio paste
8g gelatin in sheets
40g water
230g cream
10g sugar
1 pinch of salt
RASPBERRY GELEE:
125g raspberry
25g sugar
15g water
1/2 lemon juice
3g gelatin in sheets
DECORATION:
Berries
Directions:
1. Ladyfingers: mix the egg yolks with 45 g of sugar and separately whip the egg whites with another 45 g of sugar. Combine the two compounds and then add the sifted flour.
Form the ladyfingers on a baking sheet, sprinkle the icing sugar and bake at 180 degrees for 12 minutes.
2. Pistachio mousse: soak the gelatine in cold water. Mix the mascarpone with yogurt and sugar, then add the pistachio cream and gelatin. Whip the cream and add everything.
3. Assemble the charlotte and refrigerate for 3 hours.
4. Prepare the gelee and decorate the charlotte.
