PISTACHIO COOKIES: delicious and easy to prepare!

INGREDIENTS
1 egg
110g (1/2 cup) of sugar
50g (1/4 cup) of butter (melted)
160g of pistachios (ground)
85g (3/4 cup) of all-purpose flour
40g (1/4 cup) of cornstarch
16g (1 tbsp) of baking powder
For coating:
Powdered sugar
METHOD
1. In a mixing bowl, add the egg and sugar and mix with the electric mixer. Add the butter (melted), pistachios (ground), and mix.
2. Add the flour, corn starch, and baking powder, and continue to mix to obtain a compact mixture. Cover the bowl with cling film and transfer to the fridge for 30 minutes.
3. After time has elapsed, remove the bowl from the fridge and take the mixture with the teaspoon. Obtain the balls and pass them through the powdered sugar to cover them completely.
4. Transfer them to the baking tray covered with parchment paper. Bake at 180°C/360°F for 15 minutes.
5. Serve the pistachio biscuits all together on a serving dish and enjoy.
