Meatloaf with mortadella and pistachio: stringy and delicious, you will love it at the first bite!

INGREDIENTS
6 bread slices
Milk
500g of minced meat
60g (3/4 cup) of parmesan
1 onion
1 egg
Pepper
Salt
80g of pistachios
30g (1/4 cup) of breadcrumbs
Olive oil
Mortadella
Cheese
Milk

METHOD
1. In a bowl add the bread slices and pour the milk over them. Set aside to soak the milk and then drain the bread.
2. In a bowl with minced meat add the bread, parmesan, onion, egg, pepper, salt, pistachios, and breadcrumbs and mix to combine.
3. Place a parchment paper on a working surface and add a drizzle of olive oil. Place the meat mixture and flatten it with your hands to obtain a rectangle shape.
4. Arrange the mortadella and cheese on the meat and roll it out to obtain the meatloaf. Wrap in parchment paper.
5. Transfer to the baking tray. Bake in oven at 180°C/360°F for 45 minutes.
6. Cut the meatloaf into slices after baking and serve.
