Cabbage donut: the savory cake to prepare in special moments!

6 medium-sized cabbage leaves
2 liters (8 1/2 cups) water
500 g (1.1 lbs) mixed minced meat
2 eggs
6 g (1 tsp) salt + 6 g (1 tsp) to season the water
3g (1 tsp) black pepper
30 g (1/4 cup) breadcrumbs
60ml (1/4 cup) milk
METHOD
- In a small bowl combine bread crumbs and milk. Set aside to soak.
- In a pot bring 2 liters of water to a boil and add a teaspoon of salt. Put the cabbage leaves into the boiling water and completely submerge them. Leave them for 2-3 minutes to soften and transfer into a bowl with ice water for 2 minutes. Let drain or pat dry with paper towels.
- Cut off all thick parts of the cabbage stems and line a donut mold with the prepared leaves.
- In a large bowl lightly whisk 2 eggs seasoned with salt and pepper. Add minced meat, soaked bread crumbs, and mix well to combine.
- Add meat to the donut mold, gently press the meat down and shape evenly. Cover with the leaves and bake at 180C/ 356F for 1 hour.
- Let rest for 10-15 minutes before slicing. Enjoy!
