Ingredients:
4 portobello mushrooms
120 gr stale bread
salt
capers to taste
taggiasca olives to taste
fresh basil
1 egg
30 gr parmesan
extra virgin olive oil to taste
flavoured breadcrumbs
1 egg for brushing

Directions:
1. First, soak the bread.
2. Clean the mushrooms well and set them aside.
3. In a bowl, prepare the filling with capers, olives, bread, basil, eggs and parmesan.
4. Stuff the mushrooms and then bread them.
5. Bake at 220° for 45 minutes.
