Eggplant cutlets: the recipe to make them crispy and super tasty

Ingredients:
3 eggplants
5 eggs
Salt, pepper and paprika
1 tbsp of mayonnaise
1 tsp of mustard
150 g of breadcrumbs
50 g of flour
- For the sauce:
3-4 tbsp of sour cream
1 garlic clove
Parsley
Directions:
1. Peel eggplants and cut them lengthwise as shown in the video.
2. Soak them in salted water for 15 minutes.
3. Mix eggs, mayonnaise, mustard, salt and pepper.
4. Now boil the eggplants in a large pot for 2-3 minutes.
5. Make the breading by mixing breadcrumbs, flour and paprika.
6. Coat the eggplants with this mixture, then dip them in the batter made before.
7. Fry in a pan with hot oil for 5 minutes each side.
8. Serve with sauce.
