Eggplant casserole with chicken and rice: the recipe to make a tasty meal

Ingredients:
2 eggplants
Olive oil
Salt and pepper
Sweet paprika
Garlic powder
500 g of chicken breast
Seeds oil
1 red bell pepper
2 shallots
200 g of mushrooms
300 g of rice
1 garlic clove
Fresh parsley
100 g of mozzarella cheese
30 g of grated cheese
150 g of tomato sauce
Cherry tomatoes
Oregano
Directions:
1. Slice eggplants and soak them in salted water for 15 minutes.
2. Dice the chicken and sautee in a pan with some seeds oil for 10 minutes.
3. Now add diced bell pepper and shallot and cook for 10 minutes more. Them add sliced mushrooms.
4. Season with salt, pepper, paprika and garlic.
5. Pour in rice and cover with 600 ml of water, then add tomato sauce too. Cook at low heat.
6. Pat dry the eggplants and brush them with a mixture of oil, salt, pepper, paprika and garlic powder.
7. Bake at 180° for 15 minutes.
8. When rice is done add parsley and grated cheese.
9. Coat a casserole with eggplant slices, fill with the rice and chicken mixture and then fold eggplants on top to close.
10. Brush with tomato sauce, then decorate with cherry tomatoes and mozzarella cheese.
11. Bake at 180° for 15-20 minutes.
